Based on a 12-week study on risk factors for heart disease with 2 groups of people:

One group ate whole oats while the other group ate wheat.

The results showed that the oat group experienced reductions in total LDL and small dense LDL, which are forms of โ€œbadโ€ cholesterol linked to heart disease. In contrast, the wheat group showed an 8% increase in LDL cholesterol, a 14.2% rise in LDL particle numbers, and a 60.4% increase in small dense LDL particles.

The wheat-eating group also showed a slight increase in total cholesterol and triglycerides, although the changes were not very significant.

The germ, which the Bible calls the kernel of wheat, is one of the richest sources of vitamins B and E, two essential fats and proteins.

The bran, rich in fiber, helps prevent sharp spikes in blood sugar and also provides protein, B vitamins, and trace minerals.

What we get as modern flour from modern wheat is the endosperm loaded with the super carbohydrate, some protein and B vitamins. The most powerful and nutritious parts are removed and often sold separately as โ€œhealth foodsโ€ at exorbitant prices. They try to fortify with a few vitamins, and even the iron they add is impure, cheap and contaminated with mercury, lead and cadmium, toxic heavy metals that can be harmful to the body.
